Scary part of Celiac Disease

Doctor's refuse to diagnose it.

I was recently at a Celiac picnic and one of the most profound things these people had in common was all the doctors they had met -- over 100 people-- never tested them for Celiac and they waited years for a diagnosis. My own doctor refused to test me. Amost wouldn't test my daughter until I sat down and refused to leave. (both positive-thank you!)

In parts of Europe a Celiac test is quite common. So...excusseee me! Aren't most of us European? I'm 100% Irish. So, if I lived there would I have been diagnosed years ago?

Modern medicine in the USA should be ashamed. Everyone would with cronic digestive problems should be given a Celiac blood test. If doctors would wake up..the could save people years of suffering.

Hi, Kim here. My kids are GFCF (gluten and casein.) I have some yummy recipes! Rice Chex are now gluten free - no barley malt. So you can make Rice Chexy Squares with them! I add unsulphered/unsweetened coconut from Bob's Red Mill and flax seed - and I use non-hydrogentated shortening (Spectrum) instead of butter or margarine. They taste great, and are even suitable for breakfast in a pinch with the addition of coconut and flax. I have a raw food bar recipe that's killer too. Gluten free doesn't have to mean doomed - although eating out is very difficult.

Hi Kim,
We're a family of Celiac's here. Myself and two daughters. My dh is the only glutenator in the mix. He has one end of the counter and one drawer to keep his gluten in to avoid contaminating us.
Have you been on Delphi Celiac forums? They have the best GF lists on the internet.

It's shocking how they put gluten in such unsuspecting places.

I did change my avatar - as you can see.
I'll have to check out more info here as I have a friend who has gluten allergies and I'd like some dessert options.
